Happy Friday!  I’m going to keep it short (already a bit exhausted from three days of MoFo goodness), but just wanted to share the easiest most satisfying down-home dinner I’ve had in a long time:

Tofutti Guacamole Sour Cream Mashed Potatoes
Julienned Carrot and Zucchini lightly sauted in olive oil with almond slivers (a la Smitten Kitchen)
Breaded and Baked Tofu (sans pistachios this time)

Mmmm yeah.  It was awesome.
